Willie's Cacao

Willie Harcourt-Cooze didn't set out to become a chocolate maker. He set out to farm cacao. After buying Hacienda El Tesoro in the Venezuelan cloud forest, he spent over a decade growing some of the world's finest beans before founding Britain's first bean-to-bar chocolate factory in hundreds of years.

His philosophy is simple: get out of the way of the bean. Willie sources only single-estate Trinitarios and Criollos — shade-grown, traditionally farmed — and pays his farmers a minimum of $500 per tonne above world cocoa prices, more than double the fair trade premium. No middlemen. No shortcuts.

In the factory, chocolate is made in small batches at low temperatures over three or more weeks. Dark bars contain just cacao, raw cane sugar, and natural cocoa butter — nothing that interferes with the flavour of the bean. Pralines are made with roasted nuts. Caramels are made from scratch, restaurant-kitchen style.
