The 71% Sambirano Dark Chocolate from Willie’s Cacao takes you to the banks of the Sambirano River in Madagascar, where some of the world’s most celebrated cacao grows under shade trees on single estates. The flavor is astonishing — bright, complex summer fruits that seem impossible from pure cacao, raw cane sugar, and natural cocoa butter. Nothing else.
Crafted bean-to-bar in small batches in Devon, England over up to 21 days at low temperatures. Willie sources these beans Direct Trade, paying above Fair Trade premiums, because extraordinary chocolate starts with the farmers who grow it.

Willie Harcourt-Cooze was a cacao farmer before he was a chocolate maker. That's not a detail — it's everything. Willie's Cacao is what happens when someone goes all the way back to the source and refuses to compromise on the way back.
Willie's Cacao begins with a farmer. Before Willie Harcourt-Cooze was a chocolate maker, he bought Hacienda El Tesoro — a cacao farm in the Venezuelan cloud forest — driven purely by a love of adventure and a belief that the world had lost touch with what real chocolate could be. Fifteen years later, he opened the first bean-to-bar chocolate factory in Britain in centuries. That sequence matters: the farm came first.
Willie's philosophy is disarmingly simple. His dark chocolates contain just cacao, raw cane sugar, and natural cocoa butter — no soy lecithin, no vanilla, nothing that competes with the bean. He roasts in antique ball roasters, works in small batches, and takes three or more weeks to make chocolate at low temperatures. Industrial chocolate is made in hours.
His beans are exclusively single-estate Trinitarios and Criollos, shade-grown and sourced direct from farmers at well above fair trade premiums — no middlemen. Like fine wines, each estate produces a cacao with its own distinct flavor profile shaped by genetics, soil, and climate.
We carry Willie's because his bars are the clearest possible argument for what craft chocolate can be. When you taste one, you're tasting a place — and the conviction of someone who gave up everything to find it.
Every bar traces back to one farm, one harvest — Trinitario and Criollo cacaos sourced direct, at prices well above fair trade.
Antique ball roasters. Small batches. Three weeks minimum conching. No shortcuts, no additives — just cacao, raw cane sugar, and cocoa butter.
Willie buys direct, pays above market, and cuts out middlemen entirely. The relationship with the land and the people who tend it comes before everything else.
