About Mahogany Chocolates

Mahogany Chocolate Ltd. was founded in 2016 with a singular mission: to transform Central America's legendary fine flavor cacao into premium gourmet chocolate — and to do it the right way, from the ground up.

In Belize, Mahogany manages their own cacao nursery in Punta Gorda, selecting seeds from elite "mother trees" and individually cultivating each of their 75,150 trees across 167 certified organic acres in the Toledo and Stann Creek districts. Freshly picked wet beans are fermented in small batches at their centralized depot in San Antonio — allowing the unique micro-climate character of each farm to express itself in the final bar. Their program spans 204 certified organic farms and pays farmers directly, in cash, every harvest season.

In Panama, Mahogany crafts chocolate in Boquete, sourcing cacao from the biodiverse Bocas del Toro region — creating an authentically Panamanian expression of their seed-to-bar philosophy. The same Art of Cacao Science principles apply: proprietary nursery stock, individually managed trees, traditional 3-tier fermentation with passive solar drying, and hand-sorted beans professionally stored and ready for production.
