Willie's Cacao begins with a farmer. Before Willie Harcourt-Cooze was a chocolate maker, he bought Hacienda El Tesoro — a cacao farm in the Venezuelan cloud forest — driven purely by a love of adventure and a belief that the world had lost touch with what real chocolate could be. Fifteen years later, he opened the first bean-to-bar chocolate factory in Britain in centuries. That sequence matters: the farm came first.
Willie's philosophy is disarmingly simple. His dark chocolates contain just cacao, raw cane sugar, and natural cocoa butter — no soy lecithin, no vanilla, nothing that competes with the bean. He roasts in antique ball roasters, works in small batches, and takes three or more weeks to make chocolate at low temperatures. Industrial chocolate is made in hours.
His beans are exclusively single-estate Trinitarios and Criollos, shade-grown and sourced direct from farmers at well above fair trade premiums — no middlemen. Like fine wines, each estate produces a cacao with its own distinct flavor profile shaped by genetics, soil, and climate.
